@ nicola. Buy Tuscan or lacinato kale. Cut the stem out and you can pretty much do what ever you want with it. Chop small and use in salads. Steam for about 4 min and toss with a bit of olive oil and your fav spices. Also if you have a good blender you can throw a handful into a smoothie. Find a way to make it taste good for you! Enjoy.
@nicola: i heat olive oil in a skillet, then press (w/ a spatula) palm-sized pieces (no stem) in it until it starts to wilt a little. then i squeeze a lemon over it and take it out 30 seconds later.

Does anyone know how to cook Kale? Every time I cook it is so bitter.

i forgot: i am refusing to give up my medium coffee w/ cream every morning. i understand this means i am noncompliant.
